    Hello, Hayden The class was delightful. The Arancini taste wonderful. I was amazed at how well each one stuck together after being deep fried. I can't wait to get to Sicily to compare the Arancini with mine. You mentioned that licorice is a specialty of Calabria. What do they make with it? I look forward to getting your cookbook.     Hayden did an excellent job taking us through the recipe for Tartiflette. The pace of the class was just right. The history of reblochon was interesting. Wish we could get it here in the U.S. We had the tartiflette for dinner along with a green vinaigrette salad. It was absolutely delicious. A real show stopper. Thank you!
