Hello, I'm Joe B.

Having started my career back in 2001 at the Holne chase hotel in Devon, I always had the ambition to learn and cook at the highest level. After completing a 1-month stage with the 2 Michelin starred Martin Blunos in Bath I always knew that’s where he wanted to be. After a few years working at hotels and restaurants in the Southwest, I then went on to teach both recreational and chef academy courses at the award-winning Ashburton cookery school in Devon for 8 years. After gaining valuable knowledge and experience, I was still hungry to get back in the kitchen and pursue my dream. So, I left Ashburton Cookery School to go and work at the prestigious and renowned Le Manoir Aux Quat'Saissons with Raymond Blanc and Gary Jones. After completing two incredible years at Le Manoir, I have now taken the reigns at the Lake country house hotel in Powys Wales. I cook seasonal, British dishes of course with classical french techniques and as an avid forager, nature’s influences. I'm excited to share with you what I've learned as both a cookery teacher and a fine-dining chef and I'll be selecting some of my favourite dishes for us to cook together.     Again this meal was extraordinary! We would be hard pressed to find a restaurant near us that would serve anything of this quality - and I cooked it at home!! I have already booked for your next class - all the family can't wait!

    I really enjoyed my online cookery session with Joe. Very informative, delivered in a friendly way and really easy to follow. The Pan Fried Cornish Hake, chorizo and prawn bisque was delicious. Highly recommend. X
