Hello, I'm Tim M.
I am a private chef, writer, cookery teacher and presenter now living in Scotland. I’ve been into food from an early age, spending much of my childhood on the family farm in Wiltshire, gleaning a close understanding of farming and fostering a love of the great British countryside, wild food and quality produce which forms the cornerstone of how I think about food today. Over the course of my career, I’ve had the privilege to work with such culinary luminaries as Fergus Henderson, Alistair Little, Marco Pierre White and Mark Hix, as well as a stint managing VIP catering for the Ferrari F1 team in Europe. A return to my roots saw me lead the team at River Cottage Axminster, where I regularly appeared alongside Hugh Fearnley-Whittingstall on both the River Cottage series on Channel 4 and the Fish Fight campaign. Great fun and a lovely way to learn new skills, I would never have thought about making hummus using roasted carrots but it’s now going to be a regular in my kitchen it was absolutely gorgeous! I love the way Tim shares his knowledge and the fact that alternatives to the ingredients are mentioned again widening my repertoire of skills and recipes. I have to say that the Parsnip and Apple Martini cocktail was one of my favourites and I’ve tried a few ! Thanks Tim!

Awesome class, thought I would struggle with the the dough element but it all came together just like Tim said and the results were amazing. My official taster said it was the best tapas and cocktail so far. Will definitely make this again - a lot! I would heartily recommend this class to anyone wanting to learn some skills and have some fun along the way.

Tapas and tails on a Friday evening has cheered us up so much over these past months. I love the informal atmosphere and it’s so nice to see the same faces as well as new participants from around the country all there enjoying the same thing. What we end up preparing is always so good too. It never fails to get our weekend off to a great start.

excellent class with a fabulous cocktail to match. love the way Tim includes everyone and is such a fountain of (sometimes random) knowledge. We've had a really tough few months, I'm sure we are not the only ones but this is an hour a week when we step into a different world, have a laugh, smile and make some tasty food, a delicious cocktail and learn some new skills. I say this every week but one of my favourite recipes so far! A delicious cocktail and wonderful tiny scotch eggs. I have already used the tips learnt to make them again. They were so popular with the family I only just got time to take a quick photo. Friday evenings with Tim have become a family event in our household! I would recommend to anyone.

Another great tapas and tails with Tim! The scotched quails eggs were delicious and it was great to get tips for making different versions of them. We loved the ketchup and are looking forward to experimenting with different vegetables too. The cocktail was so lovely and Christmassy - think we’ll be making another one over Christmas! :-)

I really enjoyed Friday's class, my favourite cocktail so far. Very easy drinking. The tips on cooking scallops were very useful, perfectly cooked scallops and amazing flavour. So far I have recreated all the recipes I've learnt on my own and been really pleased with the results. Tim is an excellent teacher, I've learnt loads and you have such a great time you don't even realise there's a lesson happening at the same time. I would really recommend Tapas and 'Tails It's such a fun way to end a stressful week and begin your weekend.

If possible, this was probably the best Tapas and Tails session! I love Margaritas and I think that this was the finest I have tasted! The quesadillas were delicious - I ended up making a second batch as our kids just devoured them!
