About this class

Tim is a celebrity chef​​,​ writer​​,​ cookery teacher and presenter living in Scotland. Tim led the team at River Cottage Axminster​​,​ where he regularly appeared alongside Hugh Fearnley-Whittingstall on both the River Cottage series on Channel 4 and the Fish Fight campaign. You will occasionally see Tim on various foodie shows​​,​ such as Channel 4’s Sunday Brunch and BBC Food and Drink. Join Tim to celebrate our Friday evenings by marking the end of the week with a homemade cocktail and deliciously tasty snack. Tapas and 'tails is the perfect way to kickstart your weekend​​​​​​,​​​​​​ with an outstanding drink​​​​​​,​​​​​​ snack and some great foodie chat. This week we will welcome in our first Friday evening of Tapas and 'Tails of 2021 with a Smoked Haddock brandade​,​ toast Tapa and a Mai Tai cocktail. This is a bit of a cheat​,​ Smokey rendition of the classic salted cod brandard​,​ effectively​,​ we are making a garlicky oily fish paste to serve on toast the smokiness works very well with the drink.

What you will learn

We learn something new every week. Tim never fails to surprise and delight us with his insight​,​ knowledge and wisdom. These sessions are designed to share tips and tricks which bring simple​​​​,​​​​ seasonal and delicious food together and create a great Friday evening experience while still in the comfort of our own homes. You will walk away with techniques on how to combine ingredients to create a fresh and wonderful homemade snack and interesting new cocktail.

Servings : (1 - 2 servings)

Smoked haddock brandade​,​ toast - 150g piece of smoked haddock (natural rather than died if that’s possible) - Lots of great olive oil - A little butter - 1 or 2 clove of garlic - Black pepper - 1 lemon - Fresh Parsley - Chilli flakes - Some good crusty bread to serve Mai Tai - 3 shots of dark rum (or a mix of light and dark) - 1 shot of Orange liqueur - 1 shot sugar syrup I suggest using a dark sugar! - The juice of one lime - 1 or 2 shots of pineapple juice - ice (preferably crushed)

- roasting try - blender - toaster - cocktail shaker - old fashioned glass

Special instructions

This is a fun social class​​​​,​​​​ we will cook together​​​​,​​​​ make a cocktail together and mosts importantly have fun as we welcome the weekend. So​​​​,​​​​ come prepared to have some fun on zoom with others from around the country.

    Tapas and tails on a Friday evening has cheered us up so much over these past months. I love the informal atmosphere and it’s so nice to see the same faces as well as new participants from around the country all there enjoying the same thing. What we end up preparing is always so good too. It never fails to get our weekend off to a great start.

    excellent class with a fabulous cocktail to match. love the way Tim includes everyone and is such a fountain of (sometimes random) knowledge. We've had a really tough few months, I'm sure we are not the only ones but this is an hour a week when we step into a different world, have a laugh, smile and make some tasty food, a delicious cocktail and learn some new skills. I would recommend to anyone.
