About this class

Tim is a celebrity chef​​,​ writer​​,​ cookery teacher and presenter who has recently relocated from Devon to Scotland. Tim led the team at River Cottage Axminster​​,​ where he regularly appeared alongside Hugh Fearnley-Whittingstall on both the River Cottage series on Channel 4 and the Fish Fight campaign. You will occasionally see Tim on various foodie shows​​,​ such as Channel 4’s Sunday Brunch and BBC Food and Drink. Join Tim to celebrate our Friday evenings by marking the end of the week with a homemade cocktail and deliciously tasty snack. Tapas and 'tails is the perfect way to kickstart your weekend​​​​​​,​​​​​​ with an outstanding drink​​​​​​,​​​​​​ snack and some great foodie chat. This week we will create a tapa of Smoked duck and soy rolls and an Electric screwdriver cocktail. While the Tapa is a sort of homage to the Cantonese takeaway classic​,​ the Cocktail is a Maddams invention​,​ the classic vodka and orange juice is what is known as a screwdriver and this one has been jazzed up a little​,​ hence the name.

What you will learn

We learn something new every week. Tim never fails to surprise and delight us with his insight​,​ knowledge and wisdom. These sessions are designed to share tips and tricks which bring simple​​​​,​​​​ seasonal and delicious food together and create a great Friday evening experience while still in the comfort of our own homes. You will walk away with techniques on how to combine ingredients to create a fresh and wonderful homemade snack and interesting new cocktail.

Servings : (1 - 2 servings)

Electric screwdriver - 2 shots of vodka - the juice of 1 small orange​,​ two strips of zest removed - he juice of half a lime - ½ shot Cointreau - a dash of tobasco - ice Smoked duck and soy rolls - 1 smoked duck breast (I can recommend the Capriolus Fine Food website if you can't get any locally) - 100g white flour - 1 teaspoon toasted sesame oil - enough water to make a dough. - 2 tablespoons soy sauce - 1 dessert spoon full soft brown sugar - a little finely chopped garlic and chilli - shredded carrot and spring onion

This is a fun social class​​​​,​​​​ we will cook together​​​​,​​​​ make a cocktail together and mosts importantly have fun as we welcome the weekend. So​​​​,​​​​ come prepared to have some fun on zoom with others from around the country.

    Another great recipe idea. Added a bit of additional fun and interest by smoking my own duck breast before hand - delish! The cocktails are too enjoyable!

    Awesome class, thought I would struggle with the the dough element but it all came together just like Tim said and the results were amazing. My official taster said it was the best tapas and cocktail so far. Will definitely make this again - a lot! I would heartily recommend this class to anyone wanting to learn some skills and have some fun along the way.
