About this class

Tim is a celebrity chef​​,​ writer​​,​ cookery teacher and presenter who has recently relocated from Devon to Scotland. Tim led the team at River Cottage Axminster​​,​ where he regularly appeared alongside Hugh Fearnley-Whittingstall on both the River Cottage series on Channel 4 and the Fish Fight campaign. You will occasionally see Tim on various foodie shows​​,​ such as Channel 4’s Sunday Brunch and BBC Food and Drink. Join Tim to celebrate our Friday evenings by marking the end of the week with a homemade cocktail and deliciously tasty snack. Tapas and 'tails is the perfect way to kickstart your weekend​​​​​​,​​​​​​ with an outstanding drink​​​​​​,​​​​​​ snack and some great foodie chat. This week we will create a tapa of Potted Crab​,​ melba toast and apple with a 'Snowball chance in hell' cocktail. This is Tim's personal riff on the classic cocktail the "Snowball".

What you will learn

These sessions are designed to share tips and tricks which bring simple​​​​,​​​​ seasonal and delicious food together and create a great Friday evening experience while still in the comfort of our own homes. You will walk away with techniques on how to combine ingredients to create a fresh and wonderful homemade snack and interesting new cocktail.

Servings : (1 - 2 servings)

Potted crab​,​ melba toast and apple - 100g mixed fresh crab meat - a lemon - dash Tabasco - teaspoon of ketchup - 20g softened butter - a pinch of smoked paprika - 1 dessertspoon of olive oil - 1 dessertspoon of mayonnaise (shop bought will be fine) - 1 apple - 1 bunch of parsley - 3 slices of thick-sliced bread Snowballs chance in hell Advocaat is basically​,​ egg yolks​,​ vanilla​,​ sugar and brandy so rather than faff about I've made it into a proper drink. - 2 shots of brandy - 1 drop of vanilla essence or a little vanilla paste - 1 shot sugar syrup - juice of one lime - 1 egg yolk

Equipment needed

toaster sharp knife and chopping board bowls x 2 ice & crushed ice cocktail shaker (or similar)

Special instructions

This is a fun social class​​​​,​​​​ we will cook together​​​​,​​​​ make a cocktail together and mosts importantly have fun as we welcome the weekend. So​​​​,​​​​ come prepared to have some fun on zoom with others from around the country.
