Tim is a celebrity chef, writer, cookery teacher and presenter who has recently relocated from Devon to Scotland. Tim led the team at River Cottage Axminster, where he regularly appeared alongside Hugh Fearnley-Whittingstall on both the River Cottage series on Channel 4 and the Fish Fight campaign. You will occasionally see Tim on various foodie shows, such as Channel 4’s Sunday Brunch and BBC Food and Drink. Join Tim to celebrate our Friday evenings by marking the end of the week with a homemade cocktail and deliciously tasty snack. Tapas and 'tails is the perfect way to kickstart your weekend, with an outstanding drink, snack and some great foodie chat. This week we will create a tapa of Aubergine and sheep cheese 'fritto' with a Daiquiri cocktail. The Aubergine and sheep’s cheese “fritto” is a little Spanish dish Tim has loved for years, you ideally want a fresh but hard sheep cheese. The simplicity of this classic cocktail is its joy, but how it is served has changed over time, originally, it would have been served in a long glass and now is almost always served martini style…. Tim is going to go old fashioned and will also add a slice of chilli just to pep it up a little, and a honey syrup rather than a sugar syrup just to make it a little more interesting.

You will walk away with techniques on how to combine ingredients to create a fresh and wonderful homemade snack and interesting new cocktail.

Aubergine and sheep’s cheese “fritto” - 1 aubergine - 100g hard sheeps cheese (if you can't get exactly this type, don't worry) - 1 teaspoon Smoked paprika - a pinch of mixed dried herbs or some fresh thyme leaves - 1 egg - a little flour - some light olive oil for frying Daiquiri - 2 shots of rum (this could be dark or light, up to you)* - 1 shot Honey Syrup (you can make this by simmering a tablespoon of honey with a tablespoon of water) - 1 shot of lime juice - 1 slice of hot red or green chilli - ice - slice of lime zest x 2 *It’s up to you if you use dark or light rum, classically this would be made with a light rum and it originates from Cuba – it’s named after a beach and an Iron ore mine apparently. Tim's going to use dark rum today.
Equipment needed
- sharp knife & chopping board - bowls for egg & flour - frying pan - kitchen paper - cocktail shaker - old fashioned glass for the cocktail
Special instructions
This is a fun social class, we will cook together, make a cocktail together and mosts importantly have fun as we welcome the weekend. So, come prepared to have some fun on zoom with others from around the country.

This works so well! I always like the idea of aubergine but never know what to do with them, so tasty, so simple when you know how! and perfect match to another exceptional cocktail 🍸. A fun evening as always with some new skills learnt whilst enjoying a fab cocktail, what's not to like!
