Throughout the summer, we are easing into the weekend with Friday evening with some fun, creating a Tapas and Cocktail. This week we will create a Tapa of Slow cooked courgettes on toast with a Gooseberry gin martini Tail.
What you will learn
This is one of those recipes that makes you look at things in an entirely different light, a handful of ingredients and a half hour of occasionally stirring and you have something better than it seems possible to have. These sessions are designed to share tips and tricks which bring simple but delicious food together and create a great Friday evening experience while still in the comfort of our own homes.

Servings : (serves 1 - 2)
Tapa – Slow cooked courgettes on toast - 3 medium courgettes - 2 Cloves of garlic, peeled and chopped - 2 slices good bread, grilled - fresh mint sprig - fresh rosemary sprig - a few chilli flakes (optional) - lots of olive oil - salt and pepper Tail - Gooseberry gin martini - 50ml gin - 10 fresh gooseberries - a little thyme (fresh) - 10 ml sugar syrup

- iced martini glasses - frying pan

Great fun again. Really good start to the weekend. I think the cocktail was one of the best yet! It would be all too easy to have too many! Tapas was exceptional - can't wait until next Friday!
