About this class

Tim is a celebrity chef​,​ writer​,​ cookery teacher and presenter living in Devon. Tim led the team at River Cottage Axminster​,​ where he regularly appeared alongside Hugh Fearnley-Whittingstall on both the River Cottage series on Channel 4 and the Fish Fight campaign. You will occasionally see Tim on various foodie shows​,​ such as Channel 4’s Sunday Brunch and BBC Food and Drink. Join Tim to celebrate our Friday evenings by marking the end of the week with a homemade cocktail and deliciously tasty snack. Tapas & 'tails is the perfect way to kickstart your weekend​​​​​,​​​​​ with an outstanding drink​​​​​,​​​​​ snack and some great foodie chat. The bloody Bast'rd cocktail was created for Channel 4 as part of the River Cottage TV series “Hangover challenge” but will serve us rather well as a warming weekend opener when paired with the spicy pumpkin dumplings.

What you will learn

These sessions are designed to share tips and tricks which bring simple​​​,​​​ seasonal and delicious food together and create a great Friday evening experience while still in the comfort of our own homes. You will walk away with techniques on how to combine ingredients to create fresh and wonderful fried pumpkin dumplings and a cocktail of the Bloody Bast'rd!

Servings : (serves 1 - 2)

Pumpkin Dumplings: 100g finely grated pumpkin flesh (or Squash) 1 very finely chopped garlic clove 1 pinch Chinese 5 spice or homemade 7 spice A pinch of salt A dash of soy sauce ¼ Inch of finely grated ginger. 50g sugar 20g water 1 pinch of chilli flakes dash of rice vinegar 100g of plain flour a pinch of salt​,​ a dash of olive oil 60g water The Bloody Bast'rd: 2 shots gin 1 shot apple brandy 3 shots beetroot juice 2 shots tomato juice 1 shot red wine A pinch of celery salt A dash of Worchester sauce Lots of ice Plenty of black pepper A little freshly grated horseradish Sliver of celery to garnish

Equipment needed

mixing bowls rolling pin tumblers for the cocktail frying pan with a tight fitted lid (or similar)

This is a fun social class​​,​ we will cook together​​,​ make a cocktail together and mosts importantly have fun as we welcome the weekend. So​​,​ come prepared to have some fun on zoom with others from around the country.
