Seared Scallops, Wasapi Mayo & Seven Spices Tapas with a Cosmopolitan Cocktail. Join us to celebrate our Friday evenings by marking the end of the week with a homemade cocktail and snack, but why would you do that alone with an average drink and a mediocre snack!? Tapas and Tails is the perfect way to kickstart your weekend, with an outstanding drink, snack and some great foodie chat.
What you will learn
These sessions are designed to share tips and tricks which bring simple, seasonal and delicious food together and create a great Friday evening experience while still in the comfort of our own homes. You will walk away with techniques on how to combine ingredients to create fresh and wonderful seared scallops, wasapi mayo & seven spices tapas. In addition, you add a cosmopolitan to your repertoire of cocktails.

Servings : (1 - 2 servings)
Tapa – Seared scallops, wasabi mayo, seven spice - 6 hand dived scallops, trimmed - a little wasabi powder - a table spoon of mayonnaise - a little rice wine vinegar - 1 sheet of sushi nori (the seaweed squares available in most supermarkets these days) - 2 star anise - 2 teaspoons of coriander seed - 1 teaspoon of chilli flakes - 1 teaspoon ground cinnamon - 2 teaspoons of shezuan pepper - 2 teaspoons of fennel seed - 2 teaspoons of cumin seed Tail – Cosmopolitan - 2 shots good vodka - 1 shot triple sec or Cointreau - the juice of 1 lime plus a twist of lime to serve - a little cranberry juice – up to equal quantity with other ingredients - sugar syrup for sweetening if required

- pestle & mortar or spice grinder - frying pan - glass - lots of ice - sieve or cocktail strainer

I really enjoyed Friday's class, my favourite cocktail so far. Very easy drinking. The tips on cooking scallops were very useful, perfectly cooked scallops and amazing flavour. So far I have recreated all the recipes I've learnt on my own and been really pleased with the results. Tim is an excellent teacher, I've learnt loads and you have such a great time you don't even realise there's a lesson happening at the same time. I would really recommend Tapas and 'Tails It's such a fun way to end a stressful week and begin your weekend.
