Ah​,​ Duxelles what a fine example of the “total being greater than the sum of its parts” this is a super way of demonstrating how the art of combining flavours and cooking making things better. Join us to celebrate our Friday evenings by marking the end of the week with a homemade cocktail and snack​​,​ but why would you do that alone with an average drink and a mediocre snack!? Tapas and Tails is the perfect way to kickstart your weekend​​,​ with an outstanding drink​​,​ snack and some great foodie chat.

What you will learn

These sessions are designed to share tips and tricks which bring simple but delicious food together and create a great Friday evening experience while still in the comfort of our own homes. You will walk away with techniques on how to combine ingredients to create fresh and wonderful mushroom duxelles. In addition​​,​ you add a bramble and brandy sour to your repertoire of cocktails.

Servings : (serves 1 - 2)

Mushroom Duxelles on toasts - 3 large flat mushrooms - 2 cloves of garlic - 50g butter - 1 shallot - a few capers - 2 anchovy fillets - fresh thyme - parsley - salt and pepper - some slices of good toast Bramble and Brandy Sour - a handful of fresh blackberries - the juice of one lemon - 2 shots of brandy - 1 shot sugar syrup - 1 teaspoon of egg white - ice

Equipment needed

- frying pan - glass for the cocktail - shaker for the cocktail (if you don't have one​,​ don't worry)

    What a wonderful experience! I am new to Tim's classes and as a very shy person I felt very welcomed and included. Also, I didn't have all the ingredients for the cocktail so I only participated in the tapas making which was so delicious. I can't wait to join the class again.
