About this class

Tim is a celebrity chef​​​,​​​ writer​​​,​​​ cookery teacher and presenter who has recently relocated from Devon to Scotland. Tim led the team at River Cottage Axminster​​​,​​​ where he regularly appeared alongside Hugh Fearnley-Whittingstall on both the River Cottage series on Channel 4 and the Fish Fight campaign. You will occasionally see Tim on various foodie shows​​​,​​​ such as Channel 4’s Sunday Brunch and BBC Food and Drink. Join Tim to celebrate our Friday evenings by marking the end of the week with a homemade cocktail and deliciously tasty snack. Tapas and 'tails is the perfect way to kickstart your weekend​​​​​​​,​​​​​​​ with an outstanding drink​​​​​​​,​​​​​​​ snack and some great foodie chat. This week we will create a tapa of Smoked Mackerel Croquettas with a Gin Mint-ini Cocktail.

Servings : (1 - 2 servings)

Tapa Smoked mackerel croquettas - 230g smoked mackerel fillet - 500ml whole milk - 75g flour - 75g butter - 10g Chopped parsley - 1 medium onion peeled and finely diced - Pepper - Bay leaves - Thyme - 200g Cornish Gouda optional​,​ but well worth the addition - Oil for frying - flour - eggs - panko breadcrumbs Gin mint-ini - 2 shots of Gin - ½ shot dry vermouth - 4 leaves of fresh mint - 1​/​2 shot brown sugar syrup - Dash of lemon juice - Twist of lemon zest - Ice - Optional soda water to spritz

Equipment needed

frying pan saucepans sharp knife and chopping board cocktail shaker martini glass

Special instructions

Before the class starts​,​ place a small ceramic dish on the freezer ​/​ fridge to help chill the mix once cooked. This is a fun social class​​​​​,​​​​​ we will cook together​​​​​,​​​​​ make a cocktail together and mosts importantly have fun as we welcome the weekend. So​​​​​,​​​​​ come prepared to have some fun on zoom with others from around the country.
