About this class

Tim is a celebrity chef​​​,​​​ writer​​​,​​​ cookery teacher and presenter who has recently relocated from Devon to Scotland. Tim led the team at River Cottage Axminster​​​,​​​ where he regularly appeared alongside Hugh Fearnley-Whittingstall on both the River Cottage series on Channel 4 and the Fish Fight campaign. You will occasionally see Tim on various foodie shows​​​,​​​ such as Channel 4’s Sunday Brunch and BBC Food and Drink. Join Tim to celebrate our Friday evenings by marking the end of the week with a homemade cocktail and deliciously tasty snack. Tapas and 'tails is the perfect way to kickstart your weekend​​​​​​​,​​​​​​​ with an outstanding drink​​​​​​​,​​​​​​​ snack and some great foodie chat. This week we will create a tapa of Crispy Squid​,​ coriander paste with The Lemon Drop cocktail. This cocktail is a variation on the classic vodka martini cocktail. As we are looking at all these lovely vodka martini variations​,​ this is the classic place to start the lemon drop is a play on the old fashioned hard boiled sweet and you have two options for the rim either a little caster sugar or a handful of lemon sweets blitzed in a grinder to make a lemony powder (or you could use sherbet…..).

These sessions are designed to share tips and tricks which bring simple​​​​​,​​​​​ seasonal and delicious food together and create a great Friday evening experience while still in the comfort of our own homes. You will walk away with techniques on how to combine ingredients to create a fresh and wonderful homemade snack and interesting new cocktail.

Servings : (1 - 2 servings)

Crispy squid​,​ coriander paste - 1 fresh squid​,​ cleaned and washed - Oil for frying - Panko breadcrumbs - A little miso paste and a dash of water - 1 egg - A little plain flour - ½ bunch coriander - 2 cm ginger - 1 fresh red chilli - 1 teaspoon coriander seeds - 2 cloves of garlic - 1 spring onion roughly chopped The lemon drop (Variation on the classic VM) - 2 shots vodka - ½ shot Cointreau - 1 shot fresh pressed lemon juice - A sliver of lemon zest - Optional ½ shot syrup - Either a little caster sugar or a handful of lemon sweets blitzed in a grinder to make a lemony powder (or you could use sherbet…..) - ice

This is a fun social class​​​​​,​​​​​ we will cook together​​​​​,​​​​​ make a cocktail together and mosts importantly have fun as we welcome the weekend. So​​​​​,​​​​​ come prepared to have some fun on zoom with others from around the country.
