About this class

Tim is a celebrity chef​​​,​​​ writer​​​,​​​ cookery teacher and presenter who has recently relocated from Devon to Scotland. Tim led the team at River Cottage Axminster​​​,​​​ where he regularly appeared alongside Hugh Fearnley-Whittingstall on both the River Cottage series on Channel 4 and the Fish Fight campaign. You will occasionally see Tim on various foodie shows​​​,​​​ such as Channel 4’s Sunday Brunch and BBC Food and Drink. Join Tim to celebrate our Friday evenings by marking the end of the week with a homemade cocktail and deliciously tasty snack. Tapas and 'tails is the perfect way to kickstart your weekend​​​​​​​,​​​​​​​ with an outstanding drink​​​​​​​,​​​​​​​ snack and some great foodie chat. This week we will create a tapa of Carrot hummus​,​ bruschetta​,​ Greek yoghurt with a Parsnip and apple martini (this is an out there Maddams play on the classic vodka martini variations)

What you will learn

You will walk away with techniques on how to combine ingredients to create a fresh and wonderful homemade snack and interesting new cocktail.

Servings : (1 - 2 servings)

Parsnip and apple martini 1 parsnip​,​ washed​,​ peeled​,​ grated and squeezed out! 1​/​2 shot sugar syrup ¼ shot of lemon juice slice of lemon 2 shots vodka ½ shot apple brandy (calvados​,​ applejack etc) 1 teaspoon of egg white Roasted Carrot hummus​,​ bruschetta​,​ Greek yoghurt - 4 carrots peeled and chopped - 1 teaspoon of tahini - 3 whole cloves of garlic​,​ un-peeled - 1 teaspoon of coriander seeds - 1 teaspoon of carraway seeds - pinch chilli flakes - a little lemon juice - the best olive oil - salt and pepper - 2 tablespoons of Greek yoghurt - a little chopped mint and coriander - good quality bread to toast

This is a fun social class​​​​​,​​​​​ we will cook together​​​​​,​​​​​ make a cocktail together and mosts importantly have fun as we welcome the weekend. So​​​​​,​​​​​ come prepared to have some fun on zoom with others from around the country.

    Great fun and a lovely way to learn new skills, I would never have thought about making hummus using roasted carrots but it’s now going to be a regular in my kitchen it was absolutely gorgeous! I love the way Tim shares his knowledge and the fact that alternatives to the ingredients are mentioned again widening my repertoire of skills and recipes. I have to say that the Parsnip and Apple Martini cocktail was one of my favourites and I’ve tried a few ! Thanks Tim!
