Servings : 4-6

- 300g sushi rice - 400ml water - 30g Rice vinegar - 20g Mirin or (sugar) - 5g salt - vegetables oil - kikkoman Soy sauce - wasabi ( optional) - 250g+ fillet of salmon** - 4 Raw King prawns** - 1 Squid or ( cuttle fish or frozen squid tubes)** - 1 whole round fish of your choice (e.g. sea bream​,​ mackerel - not more than 500 grams)** **NOTE: Please wrap all fish in cling film and allow to freeze for 1 day and allow time to defrost before the class. This is to ensure the fish can be eaten raw safely.

- Sharp filleting knife - Bamboo or metal Skewers
