Join me for the ultimate authentic Indian experience with this rich​,​ aromatic Lamb Rogan Josh served with the most satisfying Vegetable Pulao. Lamb Rogan Josh has been one of the most commonly requested dishes by my class attendees and for good reason! The lamb is seared and cooked in a delicious curry infused with spices and ghee. Legend has it that this Kashmiri dish was originally brought to India from Uzbekistan in the 15th century and now I (among many others I'm sure) am happy to be bringing it to the UK. Vegetable Pulao is another wholesome rice meal that is really simple to make and requires less time and few ingredients. Utterly delicious​,​ packed with vegetables and the perfect complement to a spicy curry! Once you've tried this recipe you are guaranteed to skip store bought rice and won't think twice about cooking rice at home.

INGREDIENTS FOR LAMB ROGAN JOSH Lamb pieces 500 gms (diced into 1 inch pieces) Marinade in juice of ½ a lemon and a little salt Ghee 2 tbsp. 1 black cardamom​/​or 2 green cardamom Bay leaf 1 (Dry Spices) Asafoetida A pinch (optional) Paprika 1 tsp Chilli powder ½ tsp Ginger powder 1tsp Fennel powdered ½ tsp Ground cumin ½ tsp Garam masala ¼ tsp Saffron 8-10 threads Salt to taste (Garnish) ¼ tsp garam masala ¼ tsp grated nutmeg 1 tbsp chopped coriander leaves INGREDIENTS FOR VEGETABLE PULAO Basmati Rice 250 gms Sunflower Oil 1 ½ Tbsp. Cumin Seeds ½ Tsp Onion Seeds​/​ Nigella Seeds (Optional) ½ Tsp Turmeric Powder ¼ Tsp Salt ½ Tsp Fresh​/​ Frozen Vegetables of your choice 250 gms

Special instructions

Before the class begins - please marinate the diced lamb with salt and lemon juice - measure out all ingredients
