About this class

This is a classical Fish cookery class. We will focus on the techniques needed to fillet fish and create a beurre noisette sauce to accompany the fish. Filleting plaice 4 small fillets with a beurre noisette (burnt butter​,​ capers​,​ lemon zest​,​ juice and parsley) New potatoes or new potatoes cooked en papillote (potatoes steamed in baking paper with garlic​,​ parsley​,​ oil and salt) Simple salad (rocket like you suggested) with a vinaigrette.

Servings : Serves 1

Fillets of Plaice with Beurre Noisette: - 1 whole plaice or sole - 55g plain flour - 100g unsalted butter (cubed) - 2 tbsp capers (roughly chopped) - a small handful of parsley (roughly chopped) - zest and juice of 1 lemon - salt and pepper to taste Potatoes en Papillote - 150g new potatoes - a small handful of parsley​,​ roughly chopped - 2 garlic cloves​,​ smashed - sea salt - knob of butter - olive oil Rocket Salad - a small handful of rocket (washed) per person - salt​,​ pepper and olive oil - parmesan cheese

Equipment needed

- ideally you need a fish knife - baking parchment - saucepan - chopping board - frying pan
