Gnocchi. Soft little pillows of Carby heaven. I learnt to make these in London whilst working for Jamie Oliver. This recipe is an adaption form one of the recipes in Jamies Comfort Food book and is perfect for the colder months. The sauce itself has no cream but the starchiness from the gnocchi and butternut squash create that beautiful sauce that sticks to the gnocchi beautifully. If you want to keep these veggie then you can leave out the bacon or chorizo.

FOR THE GNOCCHI 500g Floury potatoes such as Maris piper or King Edward, peeled 100g tipo 00 flour (or strong white bread flour) FOR THE SAUCE 1 tbsp olive oil 3 cloves garlic 1 sprigs of fresh rosemary 1 butternut squash 250ml chicken or vegetable stock 40g Parmesan cheese 8 slices chorizo or bacon (optional) Sage (optional)

Potato Ricer or Masher Food processor/ Stick Blender (will achieve a super smooth sauce) Large saucepan Medium saucepan
