About this class

Tim is a celebrity chef​,​ writer​,​ cookery teacher and presenter living in Devon. Tim led the team at River Cottage Axminster​,​ where he regularly appeared alongside Hugh Fearnley-Whittingstall on both the River Cottage series on Channel 4 and the Fish Fight campaign. You will occasionally see Tim on various foodie shows​,​ such as Channel 4’s Sunday Brunch and BBC Food and Drink. Join Tim to celebrate our Friday evenings by marking the end of the week with a homemade cocktail and deliciously tasty snack. Tapas and 'tails is the perfect way to kickstart your weekend​​​​​,​​​​​ with an outstanding drink​​​​​,​​​​​ snack and some great foodie chat. This week we will create a tapa of Smoked Ham Croquettes with a Liquid Christmas Pudding cocktail!!

What you will learn

These sessions are designed to share tips and tricks which bring simple​​​,​​​ seasonal and delicious food together and create a great Friday evening experience while still in the comfort of our own homes. You will walk away with techniques on how to combine ingredients to create a fresh and wonderful homemade snack and interesting new cocktail.

Smoked ham croquettes - 100g top-notch smoked ham (the thicker the better) - 50g butter - 1 teaspoon chopped parsley - The leaves from a sprig of thyme - 1 teaspoon of English mustard - 60g flour - 150ml milk - Salt​,​ pepper - 1 clove chopped garlic - Flour - egg - breadcrumbs - oil for frying Liquid Christmas pudding - 2 shots Pedro Ximenez sherry (This is a sweet​,​ aged sherry​,​ its thick and syrupy and very​,​ very dark - 1 shot cherry liqueur - Ice - Orange zest 1 strip - Mixed spice 1 pinch

Equipment needed

frying pan sharp knife mixing bowl old fashioned glass (for then cocktail)

Special instructions

This is a fun social class​​​,​​​ we will cook together​​​,​​​ make a cocktail together and mosts importantly have fun as we welcome the weekend. So​​​,​​​ come prepared to have some fun on zoom with others from around the country.
