You will occasionally see Tim on various foodie shows​​,​ such as Channel 4’s Sunday Brunch and BBC Food and Drink. Join Tim to celebrate our Friday evenings by marking the end of the week with a homemade cocktail and deliciously tasty snack. Tapas and 'tails is the perfect way to kickstart your weekend​​​​​​,​​​​​​ with an outstanding drink​​​​​​,​​​​​​ snack and some great foodie chat. This week we will create a tapa of Scotched Quails Eggs with a Mince Pie Martini.

What you will learn

These sessions are designed to share tips and tricks which bring simple​​​,​​​ seasonal and delicious food together and create a great Friday evening experience while still in the comfort of our own homes. You will walk away with techniques on how to combine ingredients to create a fresh and wonderful homemade snack and interesting new cocktail.

Servings : (1 - 2 servings)

For the eggs 6 quail eggs - 225g minced pork or mixed minced pork and smoked bacon - Salt and pepper - Oil for frying - Flour​,​ beaten egg and breadcrumbs for the usual routine of breading things. - ice For the Squatchup - 100g roasted pumpkin or other squash - 1 dessert spoon of really good quality sherry vinegar - 1 dessert spoon of sugar​,​ - 1 pinch allspice Mince pie martini - 2 shots gin - 1 shot red vermouth - 1​/​2 shot dark rum (Optional) - orange zest​,​ juice 1​/​2 an orange - 1 dessert spoon of mince-meat - a pinch of cinnamon - 1 teaspoon of egg white - optional - Ice

Equipment needed

- pot to boil the eggs - frying pan - kitchen paper - Muddler (if you have one) - Cocktail shaker (or similar)

Special instructions

This is a fun social class​​​​​,​​​​​ we will cook together​​​​​,​​​​​ make a cocktail together and mosts importantly have fun as we welcome the weekend. So​​​​​,​​​​​ come prepared to have some fun on zoom with others from around the country.

    I say this every week but one of my favourite recipes so far! A delicious cocktail and wonderful tiny scotch eggs. I have already used the tips learnt to make them again. They were so popular with the family I only just got time to take a quick photo. Friday evenings with Tim have become a family event in our household! I would recommend to anyone.

    Another great tapas and tails with Tim! The scotched quails eggs were delicious and it was great to get tips for making different versions of them. We loved the ketchup and are looking forward to experimenting with different vegetables too. The cocktail was so lovely and Christmassy - think we’ll be making another one over Christmas! :-)
