About this class

Tim is a celebrity chef​,​ writer​,​ cookery teacher and presenter living in Devon. Tim led the team at River Cottage Axminster​,​ where he regularly appeared alongside Hugh Fearnley-Whittingstall on both the River Cottage series on Channel 4 and the Fish Fight campaign. You will occasionally see Tim on various foodie shows​,​ such as Channel 4’s Sunday Brunch and BBC Food and Drink. Join Tim to celebrate our Friday evenings by marking the end of the week with a homemade cocktail and deliciously tasty snack. Tapas and 'tails is the perfect way to kickstart your weekend​​​​​,​​​​​ with an outstanding drink​​​​​,​​​​​ snack and some great foodie chat. This week we will create a tapa of Pheasant breast "Involtini" & an Espresso Martini cocktail.

What you will learn

These sessions are designed to share tips and tricks which bring simple​​​,​​​ seasonal and delicious food together and create a great Friday evening experience while still in the comfort of our own homes. You will walk away with techniques on how to combine ingredients to create a fresh and wonderful homemade snack and interesting new cocktail.

Servings : (1 - 2 servings)

Pheasant breast “Involtini” - 2 pheasant breasts (you can also use chicken or a pork loin escallop) - A little grated cheese (cheddar​,​ but a good strong one!) - A handful of hazelnuts - A sprinkling of breadcrumbs - 2 cloves of garlic - 1 dessertspoonful of chopped parsley - 2 mushrooms​,​ finely chopped - A little fresh thyme and rosemary - 50g butter for cooking Espresso Martini We need a sugar syrup for this one - 100g sugar (ideally light soft brown sugar) - 50ml water - 1 shot of espresso (or very strong filter coffee if that is what you have) - A teaspoon of egg white - 1 coffee bean if you have it - ½ shot sugar syrup or less if you like it with a bit more of a kick - 1 shot of vodka - 1 shot coffee liqueur - Ice

Equipment needed

cocktail shaker (if you have one) martini glass (or other) for the cocktail some little cocktail sticks or skewers sharp knife frying pan

Special instructions

This is a fun social class​​​,​​​ we will cook together​​​,​​​ make a cocktail together and mosts importantly have fun as we welcome the weekend. So​​​,​​​ come prepared to have some fun on zoom with others from around the country.
