This is a wonderful summer dish that I have learned to create from a fellow chef.
What you will learn
I will share lots of hints and tips on how best to prepare this dish while also teaching good knife skills and how best to organise food preparation.

Servings : serves 4
- 4 chicken thighs - 4 chicken drumsticks - 100g smoked bacon lardons - 500ml chicken stock - 500ml Riesling - 2 sticks celery plus any leaves - 1 leek - 2 shallots - 6 cloves garlic - To finish: - 8 asparagus spears or fresh peas - 20 grapes - 16 new potatoes - 8 chestnut mushrooms - juice and zest of 1/2 lemon - 300ml approx double cream - 1/2 bunch flat leaf parsley - fennel or tarragon - salt and pepper
