Balti Prawns 250 gms raw prawns (shell off​,​ defrost if frozen) 1 tsp lemon (juice) 1 ½ tablespoon sunflower oil 1 bay leaf (fresh or dry) 1 medium red onion (chopped finely) 1 clove garlic (chopped finely) ½ inch ginger (chopped finely) 2 medium tomatoes-finely chopped ½ red pepper​/​capsicum (diced-bite size) * Dry ingredients to be made into a paste ½ tsp full ground coriander ¼ - ½ tsp chilli powder tsp turmeric powder Garnish ½ of the fried onion ¼ tsp garam masala ¼ tsp ground pepper A pinch grated nutmeg 1 tsp chopped coriander for garnish Coriander Rice 125 gm rice (cooked) 1 tsp Sunflower oil ¼ tsp whole cumin seeds ½ red onion (cut in thin slices) ¼ inch ginger (chopped finely) ½ clove garlic (chopped finely) ½ -1 red chilli (chopped finely) 1 handful coriander leaves (chopped) Salt to taste

Essentials for Balti Prawn Saucepan or wok with lid Knife Cutting board 2 medium bowls small bowl Apron tea towel Essential for rice Wok or frying pan

Special instructions

Before the class starts - juice the lemon - peel the onion​,​ garlic and ginger - dice tomatoes finely Please also cook the rice. A recipe for cooking fluffy rice will be provided when you book this class.
