Rustic, Vibrant and as fun to make as it is to eat! Get stuck into a taste of Latin America with this Mexican Street Food class. We will create a restaurant-quality meal of: - Smokey Chipotle Chicken - Toasted Corn Salsa - Pico de Gallo - Guacamole - Toasted Tortilla
What you will learn
In addition to creating this wonderful meal, you will also learn: - how to combine fresh and dried herbs & spices to create Mexican flavours - knife skills used by chefs - to braise meat - how to toast tortillas so that they are crunchy and taste just likey the would in Mexico - I will also be on hand to guide you through each step and answer any questions you may have along the way.

For the Chipotle Chicken: - 4 Free Range Chicken thighs, Skin and bone on - cumin seeds - dried oregano - dried chilli/chilli flakes - 400g tomato passata - chipotle paste - caster sugar - white vinegar - 2 garlic cloves - salt For the Salsa's - 2 tomatoes, - red onion - 2 cloves garlic - 1 red chilli - fresh Coriander - fresh Mint - 1 avocado, - 2 spring onion - 1 lime - 200g of sweetcorn (tinned or frozen) - salt - extra Virgin Olive Oil - Tortilla wraps to serve (either corn or flour)
Equipment needed
- 1 saucepan with lid for chicken - 1 frying pan for corn and tortillas - pestle and mortar

Had a fabulous time making this dish. We already love guacamole and pick del gallo from a trip to Mexico last year so adding a few twists to it along with corn salsa and the yummy chicken was like being back in the searing sun by the beach BBQ! It was hoovered up so fast I only managed to get one quick photo but it was utterly divine and will be a new staple on the menu planner!
