Nila Ross-Patel

Hello Everyone! My name is Nila Ross-Patel, an experienced Indian Cookery Tutor. My mum is a brilliant cook and at the age of 78, cooking is still her passion - so thanks to my mum Tara, I can now pass her knowledge from me to you. She is well chuffed I hasten to add!

I have recently worked at the Exeter Cookery School and will show you how to make a range of Indian dishes many of which originate from the Gujarat State of India which is on the west coast north of Mumbai.

The sessions will incorporate knowledge gained from my several trips to India. My teaching style reflects the various stages of my life - starting from living in student bedsits. So with this in mind, you will be shown hints and tips to help make Indian cooking easier.

Many of the dishes can be frozen into individual portions. Several can be cooked ahead for reheating or even better, gives you more time to enjoy your glass of wine. So, please join me for what I intend to be a thoroughly enjoyable experience.

this was my first cooking online course and I was so impressed. Nila was fabulous, very concise with her instructions and the class structure was easy to follow. All went very well - good pace, easy to follow instructions, fun people - I'm loving this lockdown online cooking! Will definitely join Nila's next class.

Thoroughly enjoyed my dipping in - a nice friendly start and great to meet new people- I've seen Sue so much today I feel as if I would know her! Interesting you had Charlotte from NW.

Even with dip-in I learnt things such as salt at end and grating ginger - which I did with our salmon after seeing the tikka skewers.

The only improvement conserns the positioning of your camera at the cooker - couldn't see your face but you realised that, as you did when you tilted the screen to show the pan when you were stirring in the cream Glad people asked questions that I would have liked to ask, such as freezing/microwaving.

It's such a shame Steve doesn't like the smell as Chicken Korma is my favourite dish! Do you think the cream substitutes are as good? I was rather shocked by how much cream I must be eating if I ever succumb to one...
